Penne Rustica with Hot Italian Sausage

In a skillet cook and brown 1 lb of Hot Italian Sauage preferably with Fennel
Cook Through and Set Aside

In a separate skillet add Two Tablespoons of Olive Oil
Add Chopped Red Onion (1/2 large onion) and Shallot (1 medium shallot)  Cook on Low - Med Heat until Caramelized Through
Add Strips of Sundried Tomatoes to Onion and Shallot Heat Through about One Additional Minute - Remove from heat

Prepare Alfredo Sauce
Two
Cups of Heavy Cream
6 Tablespoons Butter
2 Cups Grated Parmesano Reggiano Cheese
Fresh Black Pepper to Taste
2 Pinches of Nutmeg
Pinch of Kosher Salt to Taste

Heat the cream and add butter - over medium heat until thickened
1 - 2 minutes
Add Hot Italian Sausage, Caramelized Red Onion, Shallot and Sundried Tomatoes to Sauce
Continue to heat on Low while cooking Pasta- Stirring Occasionally

Cook Penne Pasta Al Dente (1 lb of Penne Rigate 9- 10 minutes in salted, boiling water)

Once Pasta is Cooked 
Add additional  1/2 Cup of Cream to Sauce
Top with Two Tablespoons of Freshly Chopped Rosemary - Stir Together

Completely Drain Pasta, Toss Together with Alfredo Sauce

Top with an Additional Handful of Parmesano Reggiano Cheese

Add Peperoncini to Taste
